My Keto Journey

My name is Jessica. I’ve been on the keto diet for a few months now and have lost a total of 26 pounds. When I first started my journey I was weighing 211lbs and I’m not giving up until I reach my goal weight of 145lbs. I’ve been working hard and I’m seeing that all my hard work is paying off. In the beginning, it wasn’t so easy. Like all diets, it was a tough week! But once you see the weight dropping, it just builds the motivation to stay disciplined and continuing to work hard!

The reason I start keto, was because I had just had my second son and was beginning to have insecurities about my body and myself. I was started to have trouble sleeping at night, I noticed I had more hair falling out than normal, and I just did not feel good about myself. So I did what most do, I searched the internet on what I can do to help myself. I wasn’t sure what I was hoping to find but out of nowhere I came across a post about keto. I had heard about keto but I did not really know what it was. So I did my research and found a website that gives information on keto. They also have a plan for purchase. I was skeptical at first but I kept reading. The plan comes with recipes, information on keto friendly supplements, and ways to explain to family and friends about why you are eating and drinking whatever you want. Finally, I decided to trust my gut feeling and get it! Thank goodness I trusted my gut because it was the best $37 I have ever spent! After the first week I noticed I was sleeping better, I was loosing a lot of my hair, my skin felt amazing and the best part is I lost 4lbs!! That was all the motivation I needed to continue. I’m not trying to make people buy this plan. Anyone can make a change, all they have to do is do the research and put in the work. For myself, having 2 boys, I did not have the time to do as much research and that is why I decided to buy the plan. The plan made sticking to the keto diet that much easier. Now I try and show all the delicious keto friendly food there is and try to give out as many recipes that I can. I know there are a few people that do not agree with the keto diet and that is perfectly fine. Everyone is entitled to their own opinion. Keto is working for me and I just want to share my success to motivate others to reach their weight loss goal!

Can I Have Alcohol On Keto?

To get right to the point the answer is yes, BUT! not all alcohol is keto-friendly. So keep reading and learn more about having alcohol while on keto.

If you don’t feel like reading,(which is totally understandable) scroll to the end for a shorter read and a few keto-friendly alcoholic drink recipes.

So you know you can have alcohol while on keto, but what you first have to understand is that alcohol has no nutritional value. Alcohol has empty calories. What alcohol does is temporarily alter metabolism which then tells the body to store fat. When you drink alcohol the body metabolizes it and creates byproducts which are then used up by the body before other nutrients. So to put it simply, when you drink alcohol, the body focuses on getting rid of the byproducts from alcohol instead of burning food you ate and fats on the body.

Oh, and before I forget, since you’re on keto, your alcohol tolerance is very low! I REPEAT. YOU ALCOHOL TOLERANCE IS VERY LOW WHEN ON KETO. 

Besides the body focusing on getting rid of byproducts from alcohol instead of the food you ate and body fat, and being a cheap date, the worst thing that can happen while drinking is breaking your diet! We’ve all been there. You just had a fun night drinking with friends. You get home, it’s 2am and you are hungry. What happens next? I’m sorry for the lecture but I want to make sure you’re aware of what alcohol can do to you while on keto.

Now that we’ve gotten that out of the way, let’s get into the good part. What alcohol can I have?

SHORTER VERSION

Yes you can have alcohol but it is recommended to have a drink or 2 every now and then. When you drink alcohol your body focuses on getting rid of the byproducts from alcohol instead of burning the food you ate and body fat.

Here are 5 keto-friendly alcoholic drinks!

Keto Mojito

Serves: 2

Prep Time: 5 Minutes

Total Time: 5 Minutes

  • 6 tbsp Lime Juice
  • 16 leaves of fresh mint
  • 2 cups of ice cubes
  • 3 oz white rum or tequila
  • 1 cup Sparkling water or enough to fill your glass.

Directions

  • Divide the lime juice and mint leaves into 2 glasses. Mash mint leaves using a muddler or spoon.
  • Fill the glasses almost to the top with ice.
  • Add 1.5 fl oz white rum or tequila in each glass. Fill the glasses to the top with carbonated water. Use a straw, muddler or spoon to stir.


AvoKeto Margarita

Serves: 3

Total Time: 5 Minutes

Ingredients

  • 6 oz of Tequila
  • 1 oz Lime Juice
  • 1 Avocado(Remove skin & pit)
  • Pinch of Salt
  • Ice
  • Garnish with Cilantro and Chili Lime Salt

Directions

  • Combine tequila, fresh lime juice, avocado, and salt into a blender with 2 1/2 cups of crushed ice; blend until smooth
  • Add Chili lime salt to rims of each glass
  • Pour mixture into glasses
  • Garnish with cilantro

Keto Moscow Mule(2 Recipes for this drink)

Ingredients For Ginger Syrup

  • 1/2 cup thinly sliced peeled ginger
  • 2 cups water
  • 1/3 cup granulated sugar substitute(Swerve works perfect)

Ingredients For Moscow Mule

  • 4 oz Vodka
  • 1 oz Lime Juice
  • 1 oz Ginger Syrup (use recipe above)
  • 8 oz Diet Ginger Ale
  • Mint Leaves

Directions For Ginger Syrup

  • Combine Ginger, Water & Sweetener in small saucepan
  • Bring to a boil over high heat. 
  • Lower the heat to medium and simmer for 10 minutes
  • Cool for 1 hour then strain and store in a clean jar in the fridge. Good for up to 2 weeks.

Directions for Moscow Mule

  • Combine vodka, lime juice, ginger syrup and diet ginger ale in a small pitcher
  • Then Stir
  • Pour over ice and garnish with fresh mint.

Keto Kamikaze Shooter

Serves:1

Ingredients

  • 3/4 cup of Crushed Ice
  • 2 tbsp Lime Juice
  • 2 g Granulated Stevia or Erythritol
  • 1 Shot of Vodka

Directions

  • Place ice in shaker
  • Add lime juice, sweetener, and vodka to shaker
  • Cover and Shake
  • Serve in chilled rocks glass

Keto Sangria

  • 4 oz Red Wine

Benefits of The Ketogenic Diet

Keto is everywhere; it’s the new buzzword, the new favorite among those looking to shed pounds, and the new hate victim of the food-pyramid-spouting-eat-your-whole grains mainstream medical industry. Top 5 Keto Supplements

Supplements are not necessary for the keto diet. You do not have to spend a fortune on supplements to be successful with keto. These are my top 5 keto supplements that I use on a daily basis. The reason I use these keto supplements, is to help we reach my calorie intake and reach my macros. Of course, I can use other ways of reaching my calorie intake and meet my macros for the day but I find it easier to use supplements. Delicious Keto Pizza

One of my absolute favorite foods in the entire WORLD, is PIZZA! I love pizza, but of course all that bread is not good. Now that I’m keto, I can’t have all that bread. I’ve tried different keto-friendly pizzas and tried a few recipes but they all did not fulfill my craving of delicious pizza. So I continued my search for delicious keto pizza. What I came across didn’t sound appealing to me. It was cauliflower pizza crust. I thought, there is no way this will be good. But, I gave it a shot and WOW! I was wrong. It was delicious! Now, it’s not that greasy thick crust pizza will all love, but it is definitely a must try. Anyways, here’s the recipe and I hope you enjoy.

Prep Time: 5 Minutes

Cook Time: 1 Hour

Total Time: 1 Hour 5 Minutes

Servings: 2

Ingredients

  • Two 12 ounce bags of frozen riced cauliflower thawed 3 cups packed
  • ¼ cup fine almond flour
  • ¼ cup flax seed meal
  • 1 egg
  • 1 teaspoon oregano
  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt

Directions

  • Preheat oven to 425F. Thaw the frozen cauliflower completely and then using a kitchen towel wring out all the water. Squeeze as hard a possible, the more water you squeeze out, the crispier the crust will be.
  • Spread out the cauliflower on sheet pan lined with parchment paper and bake for 12 minutes, mix well, and bake another 13 minutes.
  • Take out the cauliflower and let it cool down for about 10 minutes.
  • In a large bowl, whisk one egg, add the cooked riced cauliflower along with remaining ingredients. Mix well.
  • Place the mixture on sheet tray lined with parchment paper, place another piece of parchment paper on top. Use a rolling pin or your hands to spread out the crust to ¼ inch thickness, about 10 inches in diameter. Peel off the top parchment paper, and use a bench scraper or knife to push the edges of the dough in to form a crust wall.
  • Bake the crust at 425F for about 20-25 minutes or until it looks deeply golden brown. Remove from oven and top with sauce, cheese, and your favorite toppings. Make sure not to pile on too many toppings or the crust won’t support the weight. Bake for another 7-10 minutes, or until the cheese is melted and bubbly. Enjoy!

Who doesn’t love a freshly baked brownie? They’re so delicious! Of course being on keto means no more brownies. Wrong! I have the best keto brownie recipe and I’m going to share it with you. I hope you enjoy!

INGREDIENTS 

– 5 eggs 

– ¼ lb. butter 

– 2 oz. cocoa 

– ½ tsp baking powder 

– 2 tsp vanilla 

– ¼ lb. cream cheese 

– 3 tablespoons sweetener of choice 

DIRECTIONS 

1. Place all the ingredients in a lender and blend until smooth 

2. Pour mixture into a baking dish 

3. Bake at 325 F for 20 minutes 

4. Remove slice into squares and serve

Keto Cheesy Bacon Chicken

Serves: 4

INGREDIENTS 

– 5 chicken breasts 

– 2 tablespoons seasoning rub 

– ½ lbs. bacon 

– 3 oz. shredded cheddar 

– barbecue sauce 

DIRECTIONS 

1. Preheat oven to 375 F and spray a baking sheet with cooking spray 

2. Rub both sides of chicken breast with seasoning rub and top with bacon, bake for 25 minutes 

3. Remove from oven, sprinkle with cheese and serve 

The Best Keto Bread and Dessert Recipes

While on Keto, on of the hardest things for me to do was give up all those delicious CARBS! You don’t realize how good something is until it’s gone. I missed all breads and baked goods but of course I knew I couldn’t let my cravings get the best of me. Instead, I searched like crazy to find the best keto bread recipes and the best keto dessert recipes. 

During my search, I came across a few recipes that claimed to be the best, but had such an awful taste or were actually not even close to being keto friendly. Now let me say this, not all keto recipes are the best and the last thing I want to do is waste my time or my ingredients on breads and desserts that are clearly not the best. I want recipes that don’t taste like they’re good for you. I want recipes that no one can tell they’re even keto friendly.

Of course there was some trial and error along the way and I sure did waste my time and ingredients but in the end, I believe I was able to find the best keto bread and dessert recipes.
